The year went fast and it is already December.
December means the year end season!
Which in turn means toshikoshi soba (soba eaten to celebrate the passing of the year on New Year’s eve)!
So, this is a feature article on recommended shops in Soba Kingdom Yamagata! !! !!

I think there are many people who will eat toshikoshi soba at home this year because of COVID-19.
This article introduces toshikoshi soba (for takeout) from recommended soba shops in Yamagata, Tendo, and Kaminoyama

1. Mitsuya Main Shop (Uwamachi, Yamagata City) (Three other branches)

The long-established Mitsuya Main Shop in Uwamachi, Yamagata City.
It is one of the representative shops of Soba Kingdom Yamagata, and is crowded with many customers every day.

Originally, the manufacturing and wholesale business of soba and udon was a livelihood, but in 1945, Mitsuya was opened as a wholesale branch in order to let people taste the soba and udon noodles.

The quaint interior has an atmosphere unique to a long-established shop.
In addition to table seats, there is also a tatami room, making it easy for a wide range of generations to use.

The “soba known nationwide” is characterized by its thin noodles made with a 2-8 ratio of Yamagata prefecture’s Dewakaori buckwheat.
It goes well with the broth that has been thoroughly researched, and has been highly rated among by soba noodle connoisseurs.

In addition to the main shop, there are three other branches, the Ekimae Odori Branch, the S-S-Pal Yamagata Branch, and Selva Terrace Sendai Branch, and the scale is also top class in the prefecture (^-^)

① Toshikoshi soba menu

Toshikoshi soba is roughly divided into two types: fresh soba set and dried noodle gift set.
Please note that the fresh soba set has a best-by date of three days including the shipping date.

2. Sobaya Soemon (Saotome, Yamagata City)

Sobaya Soemon in Saotome, Yamagata City.
It is a popular shop along National Route 13, opened for over 45 years since its establishment.

The building is in the traditional style called “Karafu Shiho-ryu Buke-zukuri” and features a high atrium ceiling with eight beams spreading like an umbrella around a thick large black pillar.

Attention is also paid to the dynamic structure of the lattice ceiling that makes the most of the ancient Japanese tradition, the contrast between the black pillars and the white walls, the thick pillars, and the thick single-plate table with prominent grains of wood (^-^).

Buckwheat flour from the prefecture is the main ingredient. From autumn to spring you can enjoy Mogami-mase flour and Dewakaori depending on the season.
Soba is traditionally “freshly ground, freshly made, and freshly boiled” by four craftsmen.

Soba for lunchtime are made in the morning and those for dinner in the afternoon.
The soba mixed with sarashina flour is crispy and flavorful.

The special broth is made with top quality dried bonito, frigate tuna, and dried mackerel shavings. It goes well with freshly made soba noodles and enhances their deliciousness.

I’m grateful that the set contents are abundant (^-^)

This time, I ordered the “fresh soba for 3 people” set.

I received it that day, and the rich scent of buckwheat that slipped through was impressive.
And the broth is amazingly delicious!

It is unique to Yamagata, the kingdom of soba, that you can enjoy authentic soba at home (^-^)
Please note that you will not be able to eat store bought soba after trying these.

3. Yukyoan Mitsuhiro (Shinyu, Kaminoyama)

Yukyoan Mitsuhiro was founded in 1973 in Shinyu, Kaminoyama City

It is located in the hot spring district near the Kaminoyama Castle, making it a popular shop visited by many customers from inside and outside the prefecture.
The atmosphere inside is also attractive, a perfect example of a soba restaurant of Yamagata.

Buckwheat flour is made from stone mills in the prefecture and uses Wakaori buckwheat.
The 28-thin soba noodles are easy to eat and have a good texture.

I ordered the recommended “wariko soba” (^-^)

A soba dish rare even in Yamagata, the soba noodles are in a round lacquer ware called wariko and sprinkled with condiments with broth poured directly over them.

The owner Mr. Akiyama arranged a dish of Shimane’s wariko soba, which is fun to look at.
It seems that “the decisive factor for broth is soy sauce,” so it is carefully selected to go excellently well with the noodles.

At the “Tomorrow’s Soba Meeting” organized by Mr. Akiyama and others, they are recruiting owners to grow soba.

Buckwheat flour from Kaminoyama made at the “Tomorrow’s Soba Meeting” is used for the Toshikoshi soba of Mitsuhiro, so the taste of these soba is also intriguing (^-^)

For toshikoshi soba there is only fresh soba, but you can order for three servings and more.

On the 31st, the shop is open until 15:00.
After closing, only the pickup of ordered soba will be possible.

Soba and Mountain Vegetable Dishes Kikori was founded in 1967 in Usuzawa Koya, Kaminoyama City

Look for the banner visible past Zao Meat.

The inside of the shop is all tatami mats, and I felt somehow nostalgic and cozy (^-^)

The popular dish is the Juwari Soba made from 100% buckwheat flour and the tempura of mountain vegetables.

In addition to buckwheat, there are other products that you are interested in, such as kikori gowari soba, which is half buckwheat flour and half binder, and udon noodles, which are kneaded with raw wakame seaweed and young buckwheat leaves.

5. Suisha Kisoba (Kamata Honcho, Tendo City)

Suisha Kisoba is a long-established soba shop founded in 1861 in Kamata Honcho, Tendo City.

As the name suggests, they use a water wheel to grind the flour and offer handmade soba made from 100% buckwheat flour.

Gensoba (buckwheat with shells as it is fruited and harvested) is a mix from Hokkaido and Yamagata, and is naturally dried and stored in a low-temperature warehouse.

They are particular about milling only the amount used on the day so as not to spoil the flavor.

It is a shop that still keeps the technique of ancestors.

In addition to table seats, there is a tatami room in the calm interior where you can feel history. It can be used by a wide range of age groups.

The characteristic of these soba is that you can feel their original flavor with high aroma and sweetness.

One of the signature dish is the Japanese-style dashi stock used for soba noodles and the tori chuka noodles that use chicken.

6. Itoya (Mikkamachi, Tendo City)

Itoya is a soba noodle shop that has been in Mikkamachi, Tendo City, since the Edo period.

Not only the locals, but also because of its deliciousness and its location close to JR Tendo Station, this shop is visited by many tourists from outside the prefecture.

The specialty soba is thin noodles made with locally produced wakaori.
It is a gem that you can enjoy with the scent and texture.

It is a space where you can feel history not found anywhere else.

The menu includes a wide variety of ramen, udon noodles, and rice bowl dishes, including ita-soba, which is a local specialty of Yamagata.
