[Feature] Boulangerie NAO! Bakery in Yuza Town

Boulangerie NAO is located at the foot of Mt. Chokai in Yuza Town, Yamagata Prefecture

This is a wood-fired stone oven bakery run by a couple who moved here from Saitama prefecture.

Surrounded by nature, we experienced warm hospitality and discovered delicious bread and pizza.

This time, we had the special opportunity to interview the owners about their charms.

1. Store Introduction

Boulangerie NAO is a bakery that serves delicious bread and pizza baked in a wood-fired stone oven.

It is run by a couple who moved here from Saitama Prefecture after being impressed by the magnificent nature of Yuza Town.

The store is deep, and you can see the process of how bread and pizza are made.

Watching the dough being baked in a wood-fired stone oven is a rare and precious experience.

Manager: “We want our customers to see, feel, and enjoy our products. There is nothing we can’t show our customers, and we make bread with confidence. It makes us happy to see the expressions on our customers’ faces, too.”

It was a warm space that conveyed the passion and love that the bakery pours into its bread making and its customers.

There was a wide variety of breads in the showcase, and customers were coming in one after the other from the moment the store opened.

It’s easy to access, being close to the Shonai Kobaecha Line. Many people drop by on their weekend drives, and it’s a bakery loved by locals.

2. Boulangerie NAO's Commitment

At Boulangerie NAO, they are extremely particular about the selection of ingredients and manufacturing methods.

The wheat that forms the basis of our bread is kita-no-kaori produced in Iwamizawa, Hokkaido.

The shop owner is so in love with this wheat that he says, “I can’t make bread with anything other than kita-no-kaori!”

Kita-no-kaori is a wheat that was developed specifically for bread. We pay particular attention to how we make it so that you can enjoy its unique, mellow aroma and deep flavor.

After much trial and error, we arrived at the method of “slow fermentation at low temperatures.”

The levain, which has been fermented for four years using Yuza water and kita-no-kaori wheat, is characterized by its moderate acidity and gentle flavor.

We also bake bread and pizza in two stone ovens.

The bread is baked in a French wood-fired oven, where firewood is burned to heat the oven stones and the bread is baked using the residual heat.

As the temperature drops, we determine the appropriate temperature for each type of bread.

The far infrared rays of the stone oven allow heat to reach the inside of the bread quickly, resulting in a fluffy finished product that retains moisture.

Pizzas are cooked in an Egyptian wood-fired oven over an open flame.

By baking in a kiln at over 500 degrees, the bread is baked in one go, resulting in a crispy texture on the outside and a moist, chewy texture that is unique to a wood-fired oven.

The bread and pizza baked in the stone oven have a deep flavor and aroma that comes from the natural heat.

Using carefully selected ingredients and complex manufacturing processes that are tailored to those ingredients, we create bread and pizza that can only be enjoyed at Boulangerie NAO.

3. Boulangerie NAO products

At Boulangerie NAO, you can enjoy a wide variety of menu items, from carefully selected bread to meal breads, sweet breads, hard breads called country breads, and original pizzas.

Here are three types that we tried.

1. German Country Bread

Boulangerie NAO’s German-style country bread is made with 70% kita-no-kaori brand wheat and 30% pesticide-free rye from Yamagata Prefecture, with homemade yeast added.

The surface was smooth and firm, while the inside was surprisingly moist.

The one I received this time contained figs.

The sweet and sour taste of the figs complemented the fragrant dough perfectly, and it was delicious both as is and when toasted.

② Original Pizza

Our original pizza is only available on Saturdays, Sundays, and holidays. It is baked in a stone oven after you order, so you can enjoy it fresh.

The pizza dough is also made with kita-no-kaori wheat. The original dough, which is blended with Italian flour, is fluffy and chewy.

Boulangerie NAO’s pizza is characterized by its generous amount of toppings, chewy crust, and delicious flavor all the way to the very last bite.

The original pizza topped with seasonal ingredients from Yuza Town is also popular, so be sure to give it a try.

③ Stollen (limited time only)

Stollen is a winter treat that is enjoyed by cutting a little bit each day while waiting for Christmas. This time, we were given a special winter stollen.

Made with plenty of dried fruit that has been soaked in rum for a long period of time, it is baked in the summer and aged in the refrigerator for three months. It is a dish that will fill your mouth with a gorgeous aroma and concentrated flavor.

Boulangerie NAO’s products have a unique flavor that comes from the company’s commitment to ingredients, its cultivated manufacturing methods, and the warmth of its makers.

4. Accommodation Facilities

As a new initiative, we are preparing to offer accommodation in a log cabin on the Boulangerie NAO premises.

We are currently developing plans that will allow guests to experience baking pizza in a stone oven and enjoy the natural surroundings of Yuza Town.

Once inside, you’ll be surrounded by lovely interior decor and feel the warmth of the wood. Only one group is allowed in per day, so you can enjoy a relaxing and quiet time.

We can’t wait for the opening of this new bakery experience spot. Please look forward to it!
