img

In June 2025, Bed & Vegetable Kahoku, an experiential hotel with the theme of “enjoying vegetables,” opened in Kahoku Town, Yamagata Prefecture.

In fact, Kahoku Town is one of Japan’s leading producers of Italian vegetables .
It has quietly been attracting attention from many food professionals, including famous chefs who have fallen in love with the vegetables grown here and department store produce buyers.

In Kahoku Town, you can use the hotel as your base to come into contact with the soil, talk to people, and taste vegetables.

Instead of traveling around tourist attractions, why not take a trip that gets closer to the local life?

This time, we will introduce you to Bed & Vegetable Kahoku’s stay style, which allows you to escape the hustle and bustle of everyday life and reward your mind and body!

1. What is Bed & Vegetable Kahoku?

As its name suggests, Bed & Vegetable Kahoku is a new experiential hotel where you can experience the charm of Kahoku Town and fresh Italian vegetables grown in the town .

While the hotel has a casual atmosphere where you can relax, the slippers, amenities, and other items that come into contact with your skin are all made with high-quality materials, which is also an attractive feature.

This is recommended for those who want to experience the local culture and lifestyle while being surrounded by a comfortable sense of distance and kindness!

The hotel is located in the center of Kahoku Town.

It’s easily accessible, about 10 minutes by car from Yamagata Airport and about 15 minutes by car from JR Sakuranbo Higashine Station , making it perfect for a short weekend getaway.

Right next to the hotel was a path that felt somehow nostalgic.

I’m looking forward to seeing scenery that will add to the excitement of my trip!

2. Check-in

The front desk is on the second floor of the building.

The moment the elevator opens, you’ll find yourself in a stylish space where calming deep green wallpaper and the warmth of wood blend together.

Next to the soba at the counter were local specialties from Kahoku Town, famous products associated with Tohoku, and a hotel-original postcard set themed around “vegetables that can only be seen in their place of origin.”

One of the joys of traveling is discovering little “nice things” along the way!

The relaxing lounge space is decorated with Italian vegetables here and there, creating a space throughout the hotel that evokes the idea of “staying with vegetables.”

Now, let’s go to the room!

3. Room

There are two types of rooms: four-bed room and private rooms.

・4 bedrooms

The four-bedroom apartments are perfect for families and friends to stay together, and can accommodate up to four people in one room, with a minimum of two people allowed.

There are two types of private rooms to choose from: double and twin, and all rooms are named after Italian vegetables.

The first thing that greets you when you open the door is a pair of slippers made by Abe Sangyo, a local home shoe manufacturer.

These shoes, made by a long-established company with over 100 years of history, have a soft, spongy feel and provide firm support for the soles of your feet.

The interior is simple and the warmth of wood blends in gently.

You will feel a sense of relaxation, as if your breathing is naturally deepening, and you will be able to relax comfortably.

Outside the window, you can see the everyday scenery of Kahoku Town and the mountains towering in the distance.

I try to spend some time doing nothing, just staring out the window and daydreaming.

Perhaps this kind of time is the “reward from travel” that we need in our busy days.

All private rooms are equipped with a unit bath and toilet.

Amenities such as shampoo and treatment are from the Tohoku-based aroma brand “Tennen Kaiki.”

Of course, you can visit the hot springs, but we also recommend spending the evening relaxing in your room, surrounded by the gentle aroma of our reward amenities.

Why not spend your time however you like, depending on your mood?

4. Enjoy a night at the bar

To end the day, we recommend spending some time at the bar in the hotel lounge.

5. Vegetable-based breakfast

One of the joys of staying at a hotel is definitely breakfast!

The breakfast at Bed & Vegetable Kahoku has been particularly popular with guests since it opened, with many saying, “The vegetables are delicious!

@Kazuhiko Hakamada

Breakfast is a small buffet featuring locally grown Italian vegetables.

You can enjoy a breakfast made with plenty of Yamagata ingredients, with a focus on fresh Italian vegetables harvested in Kahoku Town.

This unique style allows you to enjoy not only raw vegetables and vegetables steamed in a bamboo steamer, but also vegetables grilled to your liking on a hot plate.

@Kazuhiko Hakamada

Kahoku Town’s Italian vegetables are characterized by their robust flavor and slight seaweed sweetness.

The climate unique to the basin, with its large temperature difference between morning and evening, is ideal for growing vegetables, and is said to bring out their sweetness and flavor.

The vegetables are fresh and juicy, so they’re delicious even when seasoned with just olive oil and salt!
Of course, it also pairs perfectly with our homemade dressing.

The soup is made without any additives and has a gentle taste that brings out the natural flavor of the vegetables.

The tables are lined with local delicacies, including yogurt drink from Ou Dairy, a company familiar to Yamagata residents, and eggs from Hanzawa Eggs in Tendo City.

Enjoy freshly picked Italian vegetables along with the local air.

Filling your stomach with vegetables from the morning is a luxurious way to start the day that vegetable lovers will love.

6. Let's go out on the town!

Another attraction of Bed & Vegetable Kahoku is that you can “use the hotel as your base for a trip to enjoy Kahoku Town.”

The town itself is the setting for the journey.

If you take a stroll around the town with the guidance of local staff, you will naturally come into contact with the warmth and richness of the land, such as the language and expressions of the people who live in Kahoku Town.

Although you won’t be walking through well-known tourist spots, you will still have some lasting travel memories.

In the future, they plan to hold vegetable harvesting experiences and tours of local sake breweries.

Please check the official website and social media for the latest information!

7. Message

“Kahoku Town is not a famous tourist destination, but it is actually a treasure trove of food and a town full of wonderful, little-known crafts.”

This was explained to us by Naoko Inoue, the hotel manager.

Inoue-san

After being assigned to Kahoku Town as a local revitalization volunteer, Inoue was so drawn to the town’s charm that he decided to move there.

Finally, he gave a message to everyone reading VISIT YAMAGATA.

“We would like to provide a service that allows visitors to see, touch, and feel the craftsmanship of local producers, experience Kahoku Town with all five senses, and create memories.

Please come and visit us.”
