Located in the Rokuta area of Higashine City, which once prospered as a post town, Bunshiro-fu is a specialized wheat gluten shop with a history of 150 years.
In addition to grilled gluten and raw nama-fu, you can also find side dishes such as burdock gluten rolls, shigure-ni, and fried gluten coated with brown sugar called “fukarinto.”
You can also enjoy kaiseki cuisine using wheat gluten and local seasonal ingredients at the restaurant Kiyoi. There is a wide variety of gluten dishes, and it is crowded with customers from inside and outside the prefecture.

Bunshiro XVI has opened the kaiseki restaurant Kiyoi, which uses locally grown seasonal ingredients, in order to learn from the great achievements of his predecessors and to allow customers to taste the deliciousness of wheat gluten.
